I recently discovered that I REALLY enjoy yogurt and granola for breakfast. I have never liked yogurt in my life, unless it was IN something, so this was quite shocking to me.
My good friend was visiting and said that she too did not like yogurt, but found ONE kind she DID like when mixed with lots of yummy granola.
So I gave it a shot – and LOVED it!
I went to buy more of that yogurt and some granola and the store-bought granola price about caused me to gag.
Then I remembered a granola recipe I had at home. I have made it to use as a snack or as cereal, so I had to give it a try with this yogurt. (But I”m perfectly happy with store-bought yogurt!)
I usually add sunflower seeds, dried pineapple and craisins, but just plain granola was my aim this time. And it totally hit the mark!
So what works for me?
I make one batch of this granola every Sunday or Monday and it lasts me the whole week, even when I had it every day one week! I store it in a ziploc baggy and take what I need every morning!
The best thing about this recipe is it is VERY basic and uses ingredients just about anyone would have on hand. And you can tweak it to please your taste buds!

Homemade Granola
Ingredients
3 cups oats
1 1/2 cups whole wheat flour
1/2 tsp salt
1/2 cup olive oil
1/2 cup honey (I use agave nectar!)
1 tsp vanilla
Directions
Mix all ingredients in a large bowl.
Place on a baking sheet and cook for 50-60 minutes at 250 degrees, stirring every 10 minutes.
Cool, then add dried fruit if desired!

So what kind of yogurt is it that is so yummy? I really don’t like yogurt either, but am willing to try a different kind!

The granola looks SO good, Erin! I made homemade granola years once, but somehow haven’t managed it since we returned to the U.S. Maybe I will finally make it happen…after the kitchen is clean (my perpetual stumbling block).
